Kraft Macaroni and Cheese is such a great comfort food. But why wait till that one day you want to just sit and pamper yourself with a creamy, cheesy bowl. You can make a great throw together meal any night with Kraft Macaroni and Cheese with Broccoli and Mushrooms.
There are so many choices of favorite Kraft macaroni and cheese. I chose the white cheddar, but the recipe below will work with any kind you like.
I also chose broccoli and my main vegetable. I love broccoli, but so many people also love a cheesy broccoli and I thought this would be the perfect choice. But, if you don’t like broccoli, throw in a vegetable of your choice. I think green beans would be good and I also love spinach in just about anything. Even cauliflower or Brussels sprouts would be great.
I had my husband grill some chicken to make this a complete meal with protein. You may prefer to have it with steak or even sausage. Or, if you’re vegetarian, serve it with tofu on the side or cube it and toss it all together.
This was such a simple and delicious meal that I can’t wait to make it again. I want to try it with sun-dried tomatoes. I think it would add an extra “zing” to the dish.
Kraft Macaroni and Cheese with Broccoli and Mushrooms | Recipe
1 7.3 oz box of Kraft Macaroni & Cheese White Cheddar
6 c. water for boiling
4 T. butter
1/2 c. milk
1 clove garlic (chopped fine)
1-1/2 c. steamed broccoli
5-6 mushrooms (sliced)
Bring water to boil and add the macaroni. Boil for an additional 7-8 minutes.
Pour cooked pasta into a colander and shake off excess water.
I same cooking pot, put back on medium heat and add butter.
Add cooked macaroni. Toss to coat with garlicky butter.
Add white cheddar cheese package from box and 1/2 milk.
(NOTE: package instructions call for 1/4 c. milk, but I like it a little creamier. You can also use half and half or cream if you like.)
After you thoroughly combine the cheddar cheese and milk, add steamed broccoli and mushrooms.
Continue to heat on medium heat stirring occasionally until mushrooms soften.
And there you have it! Ready to eat as is, or serve with your choice of protein.
